You will need to make sure that the OS on whatever e-ink device you consider is running on a 64bit architecture it seems. (If I am reading this correctly.)
I went down a little rabbit hole seeing what Android versions the MixPad app runs on since that device you linked says it is Android 11 OS.
Edit to add that Android 6 seems to be the lowest it will run on which is cool to see older devices still supported as long as the architecture is correct.
