I’m operating the Qu-pad,
and on the fader section,
it shows ∞ 40 30 20 10 5 0,
while the green meter movement area displays 20 10.
What do these different values mean?
When checking input gain, which one should I look at?

The values should be negative (below 0) and positive (above 0).
They indicate the amount of gain reduction (negative) and gain boost (positive) in decibels from the 0 dB level.
Minus infinity is maximum gain reduction (i.e. can’t hear the instrument - or OFF).
You want to lookup videos related to live mixing and gain structure.
