With the FPGA would that ever be a way that the avantis could grow into more inputs outputs or that part fixed

That console is called dlive avantis is 64/48 and dilve is 128/64.

Input and buss counts are going to be fixed. As noted, if you need more you will have to step up to the DLive which has 128 mixable inputs.
