Since the SQ Rack is driven solely by an iPad/tablet/whatever, how many iPads do you think you could connect at a single time? We have an SQ7 now that we connect 2 iPads, we would need at least another one if we were going to go to this.

You should be able to do 2 running Mixing Station, or 3 running MixPad, or some larger amount running SQ4You. Been that way for a while, and the only way it changes is if they rewrite the network stack.
It’s the same as the other SQ mixers - you can connect up to 8 remote apps at a time, with a maximum of 3 SQ-Mixpad.
For example, one instance of Mixpad alongside 7 instances of SQ4You.
