What do you do with your stereo AES?

I have no plans on ever using mine but maybe I should.

I don’t use my AES/EBU outputs, but I do avail of the AES/EBU inputs in the venue I operate.
We run touring desks through the house console, so, to minimise on AD/DA conversions, I use that input where possible.

I use the AES outputs to drive the XTA speaker processor for my mains. One less A to D conversion in the signal chain.

As well I use the AES output to drive the main system for the same reason, in my case it’s a DBX 360 DSP.

Feeding L/R and Sub to a Meyer processor

Same, I used it to feed the house console if possible, to avoid an other D/A and A/D conversion.

By using AES, you keep the signal digital instead of going through the digital to analog conversion. If you are going to take the output of your console and immediately route it to another digital device, then it makes sense to use the AES outputs and skip an D->A and A->D conversion.

IMHO, the most common digital device that someone might have after their console is a speaker processing unit, but I would assume people have come up with other ways to use it too.
